ANZAC Biscuits

Descripton

ANZAC biscuits are very common in New Zealand and Australia. They are thought to be made by Australian and New Zealand women for the Australian and New Zealand Army Corps (ANZAC) soldiers of World War I and II.

Makes 20

Ingredients

75 g (1/2 cup) Plain flour
75 g (1/3 cup) Caster sugar
75 g (3/4 cup) Rolled oats
75 g (2/3 cup) Dessicated coconut
50 g Butter
1 tablespoon (tbsp) golden syrup
1 teaspoon (tsp) vanilla extract
1 teaspoon (tsp) Bicarbonate of soda (baking soda)
2 tablespoons (tbsps) Boiling water

Optional: 150 g Cooking chocolate (dark or milk chocolate)

Instructions

1. Preheat the oven to 180°C (Gas Mark 4).

2. Sift the plain flour a large bowl. Stir in the sugar and rolled oats.

3. Melt the butter, golden syrup and vanilla extract together in a saucepan. Dissolve the bicarbonate of soda in the boiling water and stir into the butter mixture. It will froth instantly, so pour quickly into the dry ingredients. Mix together well.

4. Roll tablespoons of mixture into balls and place on greased trays. Flatten the balls well with a fork.

5. Bake at 180°C for about 15 minutes until golden brown. Allow to cool on a rack.

6. Tasty alternative: Melt 150 grams of dark chocolate in the microwave or over a double saucepan. Dip half of each of the biscuits into the melted chocolate. Place on rack until the chocolate has set.
