Apple & Blueberry Crumble

Fruit crumble is great comfort food. This recipe has additional ingredients of blueberries and pecan nuts which make it all the more wonderful to eat on a cold, wintry day!

4-6 servings

Ingredients

Crumble:
300 g plain flour
175 g brown sugar (preferably unrefined)
200 g unsalted butter, cubed (at room temperature)
50 g pecan nuts, chopped

Filling:
3 large Bramley apples
30 g butter
3 tablespoons caster sugar
80 g blueberries, halved
Pinch of cinnamon

Instructions

Preheat the oven to 180°C (Gas Mark 4). Lightly grease a 23cm (9”) square or round ovenproof dish.

Place the flour and sugar into a large bowl and mix well. Then rub the cubed butter into the flour until the mixture resembles breadcrumbs. Add the chopped pecan nuts and ensure the nuts are mixed in well.

To make the filling, peel, core and cut the apples into pieces that are ½ cm thick. Heat the 30 g butter in a pan and gently cook the apples. Add the sugar and cinnamon and continue to stir until the apples are just cooked. Add the halved blueberries and stir gently.

Spoon the filling into the bottom of the ovenproof dish. Then sprinkle the crumble mixture over the top ensuring all the fruit is covered.

Bake the crumble in the oven for 10 – 30 minutes or until golden brown. Serve while hot with custard or vanilla ice-cream.
