Banana Bread

This is a straightforward recipe for banana bread. I find it's a great way to use very ripe bananas.

Ingredients

200g plain flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon bicarbonate of soda
150g butter or margarine
225g caster sugar
3 eggs
2 ripe bananas, peeled and mashed
75g chopped pecans or walnuts
2 teaspoons grated orange peel or 1 teaspoon of vanilla extract

Instructions

Grease a loaf pan (Size:5 x 9 x 3-inch or 13 x 23 x 8-cm).

Sift together the flour, baking powder, salt, and bicarbonate of soda.

In a mixing bowl, cream the butter or margarine with the caster sugar until the mixture is light and fluffy.

Then beat in the eggs, one at a time, again until the mixture is fluffy.

Fold in the flour mixture alternately with mashed bananas. Finally fold in the nuts and orange peel (or the teaspoon of vanilla extract).

Pour the combined mixture into the prepared pan.

Bake at 160°C (Gas Mark 2) for 1 hour and 20 minutes, or until golden. When a wooden toothpick is inserted into the centre, it should come out clean.

Allow the bread to cool in the pan for 10 minutes. Then turn the banana bread out onto a rack to cool completely.

Tip: Banana bread made from this recipe always seems to taste even better the following day - so make sure you save some!
