Chicken Satay is a very popular starter or side dish, from the Thailand/Malaysia region. It is very quick and easy to make.

Ingredients
4 skinless chicken breasts
8 wooden skewers
1 tablespoon sesame oil 1 clove garlic
1 small onion
170 grams crunchy peanut butter
400ml coconut milk
Optional: 1 red chilli
Instructions
1. Cut chicken into small pieces.
2. Soak skewers in cold water.
3. Peel and chop garlic. Peel and chop onion. Deseed and finely chop red chilli (optional).
4. Preheat grill to moderate heat.
5. Thread chicken onto the skewers.
6. Satay sauce: Add oil to a pan and heat to moderate heat, then add the garlic, onion and chilli for 3-4 minutes or until soft. Add peanut butter and coconut milk and cook for another 5 minutes or until it is thick. Use half the satay sauce to brush over chicken.
7. Grill the chicken for 8-10 minutes, occasionally turning. Add the remaining satay sauce over the chicken serve immediately.
Eat with jasmine rice or basmati rice.
