Chocolate Brownies

Descripton

There is nothing better then a fresh batch of chocolate brownies. Follow this recipe and you will create your own perfect batch of chocolate brownies.

Serves

16 to 18 brownies

Ingredients

60 g dark cooking chocolate, broken into pieces
125 g unsalted butter
2 medium eggs
100 g caster sugar
2 tablespoons cocoa powder
2 tablespoons golden syrup
50 g plain flour
75 g ground almonds
100 g blanched almonds, coarsely chopped
125 ml (½ cup) sour cream or crème frâiche

Instructions

Preheat the oven to 170°C (Gas Mark 3). Lightly grease a 20cm x 25cm baking tin.

Melt the chocolate and butter together in a saucepan over a very low heat or alternatively in a microwave on a low power. Allow to cool slightly.

In another bowl beat the eggs and sugar together until the mixture is pale and creamy. Slowly beat in the chocolate mixture, cocoa and golden syrup. Add the ground almonds and flour in two parts, ensuring the ingredients are well combined after each addition. Fold in the sour cream and the chopped almonds. Spoon the mixture into the greased baking tin and bake in the oven for 30 - 35 minutes. Allow to cool in the tin.

Optional Chocolate Ganache:

100 g dark cooking chocolate, broken
100 ml cream

To make the chocolate ganache, melt the chocolate and cream together until a smooth. Then poor onto the cooled brownies in the tin and refrigerate the tin for an hour.

Once chilled cut the brownies into squares and serve.
