Chocolate Flapjacks

A moist and sweet oat-based snack

Ingredients

225g unsalted butter
225g brown sugar (preferably unrefined)
2 tablespoons golden syrup
350g rolled oats (porridge oats)
110g chocolate chips

Instructions

Preheat oven to 150°C (Gas Mark 2). Grease a 20 x 30 cm (8” x 12”) ovenproof dish.

Place the butter, sugar and golden syrup in a saucepan and heat. Stir occasionally until the butter has melted and the sugar has dissolved. Take the pan off the heat and add the oats and chocolate chips and mix well.

Pour the oat mixture into the ovenproof dish and spread the mixture evenly using the back of a spoon.

Bake in the oven for 30 minutes or until lightly golden around the edges. The mixture should remain soft in the centre. Allow the mixture to cool for 10 minutes and then cut into squares. Allow the flapjacks to completely cool before removing from the dish.

The flapjack squares will keep for a while if stored in an airtight container.
