Descripton
This pie, a tradition in Virginia and the Carolinas, is similar to pecan pie except that some people think it's even better. You decide.

Ingredients
3 eggs, lightly beaten
1 1/2 cups (375 ml) corn syrup
1/2 cup (125 ml) sugar
4 Tbs (60 ml) butter, melted
1/2 tsp (2 ml) vanilla extract
1 1/2 cups (375 ml) chopped salted roasted peanuts
A 9-inch (23 cm) deep-dish pie shell
Instructions
Combine the eggs, corn syrup, sugar, butter, and vanilla extract in a bowl, stirring to combine thoroughly. Stir in the peanuts and pour into the pie shell. Bake in a preheated 375F (190C) oven until the filling is set, 50 to 55 minutes. Allow to cool to room temperature before serving.
Serves 6 to 8.
