The Red Thai curry is a classic Thai dish. It is quick, easy to make and delicious.

Ingredients
1 can of coconut milk
2 breasts of chicken
2 teaspoons of red curry paste
1½ tablespoons of fish sauce
1½ tablespoons of lime juice
2 tablespoons of palm sugar
Jasmine or coconut rice
Instructions
- Cut chicken into strips. Heat a table spoonful of coconut milk in the wok. Allow it to boil and reduce down until glossy.
- Add the curry paste and cook for 2 minutes. Stir continually.
- Add the chicken and cook until white on the outside.
- Add the rest of the coconut milk, stir and allow to simmer for 10 minutes
- Add the fish sauce and lime juice and stir. Simmer for 5 minutes.
- Add the palm sugar.
- Taste the liquid. If it is too sweet for your taste, add more lime juice and fish sauce. If it is not sweet enough, add more palm sugar. It may take a few attempts to get the taste the balance that you desire.
Simmer for 5 minutes and serve. Eat with jasmine rice or coconut rice.
