Sugar-free banana muffins

These sugar-free muffins are great for young children. My baby loves them!

Makes 6 muffins

Ingredients

60g unsalted butter (or 75ml vegetable oil)
125ml whole milk
1 medium egg, beaten
180g self raising flour
1 ripe banana, mashed
1 tsp vanilla extract

Instructions

Preheat the oven to 200degC, Gas Mark 6. Grease a 6-hole muffin tray or fill with muffin cases.

Melt the butter - allow to cool slightly.

Stir in the milk and eggs.

Sift the flour into a bowl and make a well in the centre. Add the milk mixture, mashed banana and vanilla extract. Mix until just combined - it is better not to over-stir.

Divide the mixture between the muffin holes and bake for 35 minutes or until golden brown.

Note: the bananas provide the sweetness in the muffins. If you'd like them to be a little sweeter try adding 2 tablespoons of honey to the milk mixture.
